Spaghetti Squash Recipe

Spaghetti Squash Recipe

·         1 tablespoon of olive oil
·         Salt
·         Pepper
·         One whole spaghetti squash
·         Roma tomatoes  6
·         Garlic  3 cloves
·         Basil 2 leaves
·         3 ounces of lean pork chops
·         1 cup of onions
Preparing the spaghetti squash

  • ·         Line a baking sheet with aluminum foil
  • ·         Take the spaghetti squash and cut off both of the ends, then proceed to cut it in half.  Once the squash is cut in half take a spoon and de-seed the squash, I find that I have better luck if I make sure I get all the fibers and seeds out of the middle.
  • ·         Place the squash with the outside facing down and use half of the olive oil to coat the inside of the squash, I like to use a paper towel to coat the inside so that I know I don’t miss any spot.  Then proceed to pepper and salt the inside as desired.
  • ·         Pre-heat oven to 400 degrees
  • ·         Flip the squash over so that the oiled side is facing down and place in oven for roughly 45 minutes to an hour, I usually wait until the squash is brown on the top and it is pretty fragrant.
  • ·         Once it is done pull it out and let it cool for roughly ten minutes then grab an oven mit to hold onto the squash with and use a fork to shred the squash width wise into a bowl, it should be fairly easy. 

Preparing the Sauce
  • ·         Cut the Roma tomatoes in half length wise and use the remaining Olive oil to drizzle over them then salt and pepper as desired, these take a little while to cook at 400 degrees, they should go in for about an hour but you really need to keep an eye on them so that they don’t turn black but are browning just slightly.
  • ·         When they are done put them in a food processor with garlic and basil and puree.

Preparing the Stir Fry

  • ·         Slice the 3 ounces of pork into strips and let them marinate for a bit in soy sauce and whatever seasonings you prefer.  Then set aside.
  • ·         Cut about a cup of onions into strips as well and add to a stir fry pan or wok pan, This should all be cooked on a medium high heat, cook the onions for about two-three minutes until the onions begin to turn translucent.  Then add garlic and then the pork and continue the pork until it is cooked through.
  • ·         Once it is done, add the sauce to the stir fry pan and let the flavors blend for a bit
  • ·         Once you are ready to eat dish some of the squash on your plate and add as much sauce as you would like.  The squash saves better if you cover it tightly and don’t add the sauce to it until you are ready to re-heat it.

Austin really loves this recipe, on the days that I don’t have time to make the sauce I use Barilla’s tomato and basil sauce it is just as delicious!
